Does anything go live without a human looking at it?

Can I edit it myself?
For the parts that change often, yes. Structural changes come to us, which is deliberate. Most small business sites get broken by a well-meaning edit to something structural.
What happens to my rankings if I move platforms?
They are protected by mapping every old URL to its new home before the switch. Migrations lose rankings when nobody does that work, which is the most common way a rebuild goes wrong.
